Watermelon with Chili, Salt, Mint & Lemon Zest

Saturday we had an impromptu dinner with some friends and I have been craving a sweet & delicious watermelon for weeks now. I stopped by the Turnip Truck Gulch, and picked one up with a particular recipe idea in mind. It was the perfect sweetness and wow did this recipe deliver!! I decided to get decorative with a melon baller to give it a little more pizazz! I hope you will enjoy it as much as we did!

1 small to medium sized watermelon
1/4 teaspoon chili pepper flakes
zest of 1 lemon
1/4 teaspoon Himalayan pink salt flakes (this is important)
6 larger sized mint leaves rolled & sliced into ribbons

cut the melon in half or quarters (whichever you find easier to work with)
find a beautiful bowl to use and add the watermelon balls
zest the lemon over the watermelon
sprinkle chili pepper flakes and Himalayan salt flakes
add the mint ribbons
Serve and enjoy!!
