Leek, Feta, Basil, Pine Nut and Chili Pepper Pizza with Brown Rice Tortilla Crust

I find myself making these delicious wafer thin pizzas quite often. You can make these simple and oh so yummy pizza's with any of your favorite toppings. My favorite right now is sauteed leek, feta and pine nut with olive oil, red chili pepper and fresh basil. Mmmm....
I discovered a wonderful brown rice tortilla at The Turnip Truck, my local health food store in East Nashville. I have a wheat & gluten allergy among others and these are such a wonderful alternative to bread. They are great for wraps, pizza's, burritos or toast them up for chips! The brand I have found and am a huge fan of is Food For Life and you can find them in the freezer section. I will be sharing many more recipes that will include these little delights, so stay tuned!

Ingredients:

2 - Brown Rice Tortilla
1 - Leek (white into mid green)
Feta Cheese
Pine Nuts
Red Chili Pepper
Olive Oil
Fresh Basil
Salt
Freshly Ground Pepper

Directions:
Preheat the oven on high broil.
Saute the leek with a drizzle of olive oil, pinch of salt & freshly ground pepper.
Lightly spread olive oil over each tortilla with a basting brush, spread the sauteed leeks, pine nuts, feta cheese and chili peppers.
Place the pizza tortillas directly in the oven on the top rack without a baking sheet for about 5-7 minutes depending on your oven. Keep an eye on them as they will burn quickly.
While the pizza tortilla's are in the oven, take 4-6 basil leaves, stack them atop one another, roll and slice the basil into ribbons.
When the pizza tortillas are browned to your desire, remove from oven, add the basil ribbons and slice into squares or triangles... I personally prefer a square pizza slice. :) Enjoy!
